Chapter 12 - DANTE'S FAILURE
Dante had become controlling too.
Different style.
Same family.
He approved every major food order.
Challenged marketing spend.
Fought floor managers over labor.
Treated cash conservation like a moral virtue.
Employees respected him.
Some feared him.
His sous-chef once said:
“You act like every dollar spent is betrayal.”
Dante snapped:
“Every dollar matters.”
“Not every dollar needs your permission.”
That sentence stayed with him.
Victor’s mistake was replacing Dante with Julian without understanding the debt.
Dante’s mistake was believing financial competence entitled him to control everything.
The restaurant needed neither brother alone.
Dante’s controlling style had consequences in the kitchen too.
He delayed replacing two worn ovens because he wanted to preserve cash.
One failed during service.
The pastry chef lost an entire prep run.
Staff worked around it for two weeks.
The temporary workaround increased overtime enough that the savings became questionable.
His sous-chef, Maya, confronted him.
“You don’t get points for not spending money if the problem costs us somewhere else.”
